Veggie Lovers Salad Recipe

 1 bag of leafy romaine lettuce or one bunch romaine, chopped
 ½ bag of baby Spinach
 ½ bag of shredded coleslaw
 1 cup beets, diced (these can be canned or roasted yourself)
 1 cup tomatoes, diced
 ½ cup yellow banana peppers, chopped
 ½ cup of each red pepper and green pepper, chopped
 1 can artichoke hearts, drained and chopped
 1 small can sliced black olives
 1 ripe avocado, peeled, pitted and sliced
 ½ cucumber, diced
 ½ cup fresh mushrooms, sliced
 any other veggies you’d like to add…
 Jar of Jimmy’s Coleslaw Dressingor Jimmy's Pineapple Coleslaw Dressing
 Or
 Jar of Jimmy’s Creamy Ranch Dressing

In a large bowl, add all the above ingredients and toss with either Jimmy’s Coleslaw dressing, if you prefer a sweeter dressing, or Jimmy’s Creamy Ranch Dressing. Serve immediately.
