Caramel Sweet Potatoes

Caramle Sweet Potatoes Recipe

 4 Medium Sweet potatoes
 6 oz. Jimmy´s Caramel or Jimmy´s Low Fat Caramel Dip
 1 tsp. pumpkin pie spice
 1 tsp. salt
 1/4 cup butter
 cooking spray

Preheat oven to 350 degrees F.

Prepare the sweet potatoes by washing, peeling, and cutting into approximately 1 inch by 1/2 inch portions.

Spray the bottom and sides of a glass casserole dish. Place the sweet potato portions in the casserole, sprinkle with 1 tsp. of salt and 1 tsp. of pumpkin pie spice. (Cinnamon and nutmeg mixture with work) Slice the 1/2 stick of butter into about 8 pieces and dot over the potatoes.

In a microwave safe dish heat the Jimmy´s Caramel Apple Dip on low in microwave for about 1 minute (to soften but not boil)

Pour the Jimmy´s Caramel over the potatoes. Cover and bake for about 45 minutes.

Remove from oven and carefully remove foil. Gently stir to coat all the potatoes with the sauce.

Place uncovered under the broiler for 5 minutes.
