Caramel Cashew Ice Cream Dessert Recipe

 14 cashew shortbread cookies
 3 Tbsp butter, melted
 1 - 48 oz container vanilla ice cream
 1 tub Jimmy's Caramel Dip
 1 1/2 cups salted cashews, chopped
 1 container Cool Whip

Crush the shortbread cookies in a food processor or blender. Pour melted butter into shortbread crumbs and mix well. Pat the crumbs into an even layer on the bottom of a 9 x 9 baking dish. Freeze until firm.

When shortbread layer is frozen, spread softened vanilla ice cream over the top in an even layer. Freeze until firm.

When ice cream is firm, spread 3/4 of a tub of Jimmy's Caramel Dip on top of ice cream and then sprinkle the chopped cashews on top of the caramel - reserving 1/2 cup of the cashews to be sprinkled on top. Freeze again until firm.

Spread Cool Whip over cashew layer. Warm remaining caramel slightly and drizzle it over the top of the Cool Whip to decorate then sprinkle remaining cashews over the caramel. Freeze until ready to serve, at least 3-4 hours.
